Is it healthy to eat potato skin?
Potatoes are considered to be one of the greatest foods in the world due to their high nutritional value
and low price.
Some surveys have found that in Russia, Bulgaria, Ecuador, and other countries, there are several
famous "Village of Longevity", where people's staple food is potatoes.
Potatoes are rich in starch, vitamin C, vitamin A, B vitamins, dietary fiber, pantothenic acid, and
minerals such as phosphorus, calcium, magnesium, and potassium.
The vitamin content of potatoes is 2.5 times that of carrots, 3.3 times that of Chinese cabbage, and
4.2 times that of tomatoes, and the highest content of vitamin C is found in vegetables.
Studies have shown that potato skins have a vitamin content as high as 80%, which is much higher
than that of potatoes.
Potato skin contains solanine which is a
glycoalkaloid, also a toxic substance in
potatoes.
However, the solanine content of potatoes is
negligible. The experimental data shows that
100 grams of potatoes with skin contain only
0.025 grams of solanine.
An adult weighing 60 kg eats 15 kg of potatoes
with the skin on for several days. Ingested
solanine will harm his body.
However, no one can eat 15 kilograms of potatoes.
Therefore, potatoes are still quite safe, as long as you don't eat potatoes with the skin on in large
quantities over a long time. Click here to get more health tips.
